Bicchierini di mousse allo yogurt e frutta

Questa ricetta la preparo da anni, in mille varianti. È semplicissima e molto gustosa, basta avere pochi ingredienti e il successo è assicurato! Puo’ essere preparata in bicchierini come ho fatto io, ideale nei buffet o per una cena in piedi, oppure in un’unica terrina trasparente, come se fosse un tiramisù. E se non abbiamo ciliegie e more, possiamo farla con pesche e lamponi o alle fragole…insomma, qualsiasi frutta è perfetta!!!

Ingredienti (per 6 bicchieri)

500 gr Frutta di stagione
250 Yogurt alla vaniglia
250 gr di panna fresca
Limone
Zucchero
Savoiardi

Procedimento

Puliamo e tagliamo la frutta. Condiamola con il succo di limone e zucchero a piacere (deve essere abbastanza “condita” perchè il liquido che si formerà ci serve per intingere i savoirdi) . Lasciamola insaporire per un’oretta, quando vedremo che si è formato un bel po’ di sciroppo, scoliamo la frutta e mettiamola da parte e prendiamo il liquido. Se ci sembra troppo dolce possiamo allungarlo con poca acqua. Ora intingiamo velocemente un savoriardo e posizioniamolo sul fondo del bicchiere (io ho dovuto spezzarlo in due). In una ciotola, montiamo la panna ben soda e amalgamiamola delicatamente allo yogurt e versiamo un paio di cucchiai abbondanti sopra i savoriardi.
Completiamo i bicchieri con la frutta che abbiamo messo da parte. Prima di servirli, tenerli in frigo per un paio d’ore.
